What’s not to like about lo hei, the prosperity toss that involves mixing raw fish with assorted shredded veggies, crackers, sauces and condiments, while meting out auspicious Mandarin sayings like nian nian you yu (abundance all year round) and da ji da li (good luck and great prosperity)? After all, yu sheng (raw fish salad) with a variety of veggies can only be good for you, right? Not really, if you take into account fat and sugar levels from the liberal amounts of flour crisps, plum sauce and sesame oil. To cut excess calories, Bryan Tan, sous chef at Changi General Hospital came up with this lighter — but no less yummy — version. Replace some plum sauce with fibre-rich passion fruit pulp. Use fresh instead of pickled or preserved ingredients. There you have it, a healthier lo hei!

Recipe: Passion Fruit Yu Sheng (Serves 5)
For passion fruit dressing
pulp from 2 passion fruits
1 tbsp plum sauce
1 tbsp lime juice
2 tsp honey
For yu sheng
juice from 2 limes
salmon slices (as desired)
80g Japanese cucumber, julienned
80g carrot, julienned
80g apple, julienned
80g white radish, julienned
80g honeydew, julienned
80g yam, julienned, wash, drained and toasted for 20 minutes at 160 deg C till crispy
50g Mandarin orange
50g pomelo pulp
1 tsp olive oil
pinch of five-spice powder
pinch of pepper
30g sesame seeds
30g pine nuts
- To prepare dressing: Combine ingredients in mixing bowl, stir well and set aside.
- On large round plate, assemble salmon, cucumber, carrot, apple, white radish, honeydew, yam, cornflakes, orange and pomelo (as shown). Drizzle lime juice over salmon. Pour dressing and olive oil over, then sprinkle with five-spice powder, pepper, sesame seeds and pine nuts.
- Toss and say auspicious phrases. Serve fresh.
