Mild in appearance and flavour, cucumbers are often relegated to “filler veggie” status – tossed in salads for crunch, or tipped into drinks for the barest hint of flavour. But don’t be too quick to draw conclusions. Besides the fact that cucumbers are technically fruits, nutritious produce doesn’t always have to be bold and colourful!
With its multitude of health-boosting perks and super low calorie count (just 45kcals each), cucumbers may be one of the most underrated foods around. They’re rather cheap too! We like having one or two in the kitchen at all times – stored on the counter to prevent them from getting mushy. They’re perfect for making smoothies, sandwiches, soups, slaws and more.
