It’s a common problem: You buy a whole pumpkin from the supermarket because it’s economical, thinking to make a nice meal out of it, only to realise that there’s just. Too. Much.
This orange veggie, which also happens to be a symbol for Halloween, is high in fibre, making you feel full fast. At the same time, it offers just 26 calories per 100 grams, so it’s a really diet-friendly food. Plus, pumpkin is rich in antioxidant vitamins A, C and E.
The only catch is, how many ways can you cull a pumpkin? Apart from steaming and roasting, you can use it in baking cakes and pies. Or to save time, make a lovely drink out of it. Elika Mathers, a certified health coach and co-owner of Kitchen by Food Rebel cafe, shares this clever recipe for a delicious pumpkin pie smoothie. It’s like having the pie without butter and sugar!
Elika says: “This smoothie has the right combination of good fats from coconut milk. The roasted pumpkin helps to manage sugar cravings, while the allspice gives your metabolism a boost. Highly recommended for those on a ketogenic (fat-burning) diet!”
Recipe: Pumpkin Pie Smoothie
– 150ml organic coconut milk
– 100ml drinking water
– 5g allspice powder
– 1 banana
– 50g pumpkin, roasted
1. Place ingredients in a blender and blend until a smooth and creamy consistency is reached.
