Recipe: Beetroot Noodles, Orange, Tofu and Walnut Salad

125g beetroot noodles
Carrot, 2.5cm long, finely sliced
150g silken tofu, cubed
1. Boil noodles according to instructions on the package. Drain and set aside to cool.
2. Slice the orange in half. Juice one of the halves, then take the skin off the other and cut the fruit into cubes.
3. Top noodles with orange cubes, carrot slices, silken tofu cubes and nuts. Drizzle orange juice over everything. Serve.
